Beetroot upperi (Beetroot stir fry kerala style)


I learnt this dish from my  neighbour  aunty.   Upperi  can be  prepared  with many vegetables with few variations in spices.

Here I am  presenting a  very simple quick stir fry which is mostly a regular item  in malayali  homes for lunch.



Ingredients

 

Beetroot                                 ¼ kg (finely chopped or grated)

Onion                                      1

garlic                                       8 to 10 flakes

green chillies                         4 to 4

cumin seeds (jeera)             ½ tsp

grated coconut                     ¼ cup

turmeric  powder                 ¼ tsp

mustard seeds                      1 tsp

curry leaves few

salt to taste

oil                                            ½ tbsp

 

Method


Wash beetroot,  peel the skin  and cut into pieces.   Then  cut onions and  green chilly,  peel the skin of garlic  and keep aside.


In a mixer or chopper  add all vegetables,  coconut,  cumin,  curry leaves and salt . Just pulse once  everything together coarsely .  (If  you pulse in mixer you  can save time)

If using grated  beetroot then  grind coconut, onion, green chilly,  garlic, curry leaves, cumin and salt into coarse  paste without adding water.   Then mix this grated beet root.

Heat oil in kadai add mustard seeds then turmeric powder fry for  a min. Then add beetroot mix.   Mix well  sprinkle little water cover and cook in low flame till done.


Tasty beetroot upperi (stir fry ) ready to serve.
