Kuttanadu is a region in the Alappuzha, Pathanamthitta and Kottayam Districts, in the state of Kerala, India, well known for its picturesque vast paddy fields and its geographical peculiarities. Its known as the Rice bowl of kerala. Its surrounded with back waters and you can see water everywhere. It's the region with the lowest altitude in India, and one of the few places in the world where farming is carried out below sea level. Its knowns for its spicy and delicious dishes such as Karimeen pollichathu, spicy prawns fry, kuttanad chicken recipes etc. Its is the only place where we can see Houseboats in kerala and tourists visit from all over the world to enjoy the scenic beauty and the delicacies.
Ingredient
Prawns cleaned 1 cup
Red small onion ½ cup (sliced)
Garlic chopped 2 tbsp
Coconut slices 1 tbsp
Ginger ½ tbsp
Curry leaves few
Coriander powder 1 tbsp
Red chilly powder 2 tsp
Turmeric powder ½ tsp
Masala for marination
Fennel seed(perimjeerakam) ½ tbsp
Black pepper corns 1 tbsp
Cinnamon stick ½ inch
Cloves
2
Cardamom 1
Lemon juice 1 tbsp
Corn flour 1 tbsp
salt to taste
Method
Grind all marination ingredients into
fine paste. Then apply this to cleaned
prawns keep aside for min 20 min. If you keep
it for more time it tastes better.
Heat oil in pan, shallow fry the marinated prawns till it is
done. In the remaining oil add small
onions fry till little pink colour add
chopped ginger, garlic and green chilly cook everything till its color
changes then add chilly powder, coriander powder fry till raw smell goes then
add sliced coconut and curry leaves fry for 2min, then add shallow fried
prawns and add ¼ cup of water mix it well
so masala coat the prawns, Cook till becomes dry. Spicy spicy
kuttanadan prawns roast is ready to serve .
