Gajbaje is a
traditional konkani dish prepared
using Monsoon vegetables like
Bamboo shoots, Colocasia leaves
(chembila), mangalore cucumber,
jackfruit seeds, yam, beans etc. This
is mostly prepared on the day of Ashada Ekadashi. That day
those people who are on
fasting eat this with Rava idly or
chappathis.
Ingredients
Vegetables
chopped
2 cups
Grated coconut 1 cup
Red chillies 10
Coriander seeds 3 tsp
Urad Dal
2 tsp
Mustard seeds ¼ tsp
Curry leaves few
Coconut oil 2
tsp
Salt to taste
Method
Prepare knots of
colocasia leaves, then pressure cook all vegetables for 2 whistles. Grind red chilly and coconut with little water to coarse paste. Heat ½ tsp oil, fry the coriander seeds till aroma comes, then grind it with coconut
and chilly paste. Again heat half tsp
of oil, add urad dal fry till light brown, then grind it for 2 seconds along
with the paste already prepared. Mix
this paste to cooked vegetables with salt for boil it for 5 to 10 minutes then
heat 1 tsp of oil, then temper with mustard and curry leaves.
